Ingredients
- 1½ cups cornmeal
- 1½ cups all-purpose flour
- 1½ tsp baking powder
- ¼ tsp baking soda
- ¾ cup melted butter
- ½ cup brown sugar
- ¼ cup maple syrup
- 2 eggs
- 1 can Wild Sol Salsa Verde
- ½ cup sour cream
- ½ cup whole milk
- 1 cup shredded cheddar
- ¼ cup bacon fat, ghee, or oil
Instructions
- Preheat oven to 350°F. In a large bowl, whisk together dry ingredients. In a separate bowl, whisk wet ingredients until smooth. Combine wet and dry mixtures.
- Heat a cast-iron skillet over high heat and add fat. When it begins to smoke, pour in batter.
- Transfer skillet to oven and bake for 45 minutes, or until golden and a toothpick inserted comes out clean.
- Serve in wedges. For extra indulgence, brown sides in butter and drizzle with maple syrup and sea salt.
