Salsa Verde Cornbread

Ingredients

  • 1½ cups cornmeal
  • 1½ cups all-purpose flour
  • 1½ tsp baking powder
  • ¼ tsp baking soda
  • ¾ cup melted butter
  • ½ cup brown sugar
  • ¼ cup maple syrup
  • 2 eggs
  • 1 can Wild Sol Salsa Verde
  • ½ cup sour cream
  • ½ cup whole milk
  • 1 cup shredded cheddar
  • ¼ cup bacon fat, ghee, or oil

Instructions

  1. Preheat oven to 350°F. In a large bowl, whisk together dry ingredients. In a separate bowl, whisk wet ingredients until smooth. Combine wet and dry mixtures.
  2. Heat a cast-iron skillet over high heat and add fat. When it begins to smoke, pour in batter.
  3. Transfer skillet to oven and bake for 45 minutes, or until golden and a toothpick inserted comes out clean.
  4. Serve in wedges. For extra indulgence, brown sides in butter and drizzle with maple syrup and sea salt.
